Our Matambu-processed coffee celebrates the indigenous Chorotega community’s deep heritage by using their traditional barrel-fermentation (fruits soak in a proprietary solution for 5 days, within an anaerobic tank) methods and sun-drying rituals, resulting in a richness and bright acidity that tell the story of their ancestral craft.
